Blackberry and Balsamic Chicken

Serves 4; 3 ounces chicken, 1/2 cup rice, and 2 heaping tablespoons sauce per serving

When the leaves start to change color, prepare this earthy dish of seared chicken breasts topped with a sauce made of blackberries, balsamic vinegar, and a hint of brown sugar and lemon zest.

Ingredients

1/2 6- to 7-ounce box quick-cooking white and wild rice, seasoning packet discarded
4 boneless, skinless chicken breast halves (about 4 ounces each) or 1 pound turkey breast cutlets, all visible fat discarded
1 teaspoon salt-free all-purpose seasoning blend
1 teaspoon olive oil
1 cup frozen unsweetened blackberries, thawed, juice reserved
1/4 cup fat-free, low-sodium chicken broth or water
1 tablespoon light brown sugar
1 tablespoon balsamic vinegar
1 teaspoon grated lemon zest

Cooking Instructions

Prepare the rice using the package directions for half the box, omitting the salt and margarine. Cover and set aside.

Meanwhile, put the chicken with the smooth side up between two pieces of plastic wrap. Using a tortilla press, the smooth side of a meat mallet, or a rolling pin, lightly flatten the breasts to a thickness of 1/4 inch, being careful not to tear the meat. Season both sides of the chicken with the seasoning blend. (If using turkey cutlets, there is no need to flatten first.)

Heat a large nonstick skillet over medium-high heat. Add the oil and swirl to coat the bottom. Cook the chicken for 5 to 6 minutes on each side, or until browned and no longer pink in the center. Transfer to a serving plate. Cover with aluminum foil to keep warm.

Put the remaining ingredients in the skillet and stir. Cook over medium heat for 3 to 4 minutes, or until warmed through, stirring occasionally. Stir in any juices from the chicken.

To serve, spoon the rice to the side of the chicken. Pour the sauce over all.

Variation: If you prefer a seedless sauce, use a rubber scraper to push the sauce through a fine-mesh sieve into a medium bowl. This will yield about 1/4 cup sauce. If you would like 1/2 cup strained sauce total, start with 2 cups frozen blackberries (thawed with juice). The remaining ingredient amounts stay the same.

Message from the Executive DirectorBlue Man Header

With the Thanksgiving holiday quickly approaching it seems only fitting that my comments this month involve giving thanks to so many people.  First, thank you to those members who attended our anniversary party last month marking 10 years of fun and fitness at Westview Healthplex Sports Club. The casino night party was awesome. I want to thank our sponsors and donors who helped make this event so special for many members. It would not have been half the celebration without the support of our sponsors and members who attended. Look for more fun and social activities in the future.

I would also like to thank the 206 members who joined Westview Healthplex before the doors opened in October of 1998. They are still members today. There are many others that joined during our first month, as well as our first year who are still with us.  Congratulations on your commitment and dedication to achieving and maintaining an active and healthy lifestyle for the past 10 years. Thank you for choosing Westview Healthplex and allowing us to serve you.

At Westview Healthplex Sports Club our philosophy is to provide our members with high quality programs, excellent customer service and state-of-the-art facilities. In order to keep your club updated and beautiful, the club has recently replaced carpet in the locker rooms and made some minor refurbishments in the wet areas to maintain the facilities and keep them aesthetically pleasing. We hope you have noticed these changes and are enjoying the updates.

As an early holiday gift to our members beginning, Monday, December 1, the club will make a price adjustment to our mat Pilates program. Mat Pilates is currently a fee based specialty class offered at various times throughout the week. As of December 1, we have chosen to add this class as one of our group fitness offerings included in your membership. This is a great class to help you become familiar with the benefits gained from Pilates. Pilates teaches body awareness, good posture and easy, graceful movement. Pilates improves flexibility, agility and economy of motion. It can even help alleviate back pain. In fact, after experiencing our mat Pilates classes, many of you may want to move on to the Pilates Reformer program located in the new mind/body studios.

There are many things to celebrate and be thankful for. Thank you for being members of Westview Healthplex. I wish you and your family a great month and Happy Thanksgiving!

Warm Regards,

Tom Campbell
Executive Director

Healthy Holiday TipsHoliday Dinner

Westview Healthplex wants you to stay healthy this holiday season with the help of these tips and advice from your health care provider.

The holidays can be a joyous time of year shared with family and friends, but they can also bring stress and anxiety as we struggle to keep up with often-unrealistic demands and expectations.
That's why it is so important for all of us to relax and take good care of ourselves. Over the holidays, you will enjoy favorite holiday dishes, family traditions, and extra social gatherings. In the midst of holiday fun and preparations, remember to eat and sleep well. Being well-nourished and rested will allow you to enjoy your holiday activities.
  • Take time for yourself. Although spending time with friends and family is essential, it's also important to have at least five minutes to yourself to relax. Try practicing deep breathing exercise when you feel stressed out.
  • Don't set unrealistic exercise goals. Aim to exercise 20 minutes a day instead of an hour. You'll be sure to get at least 20 minutes of exercise per day without feeling disappointed if you do not complete an hour.
  • Enlist a friend or family member to exercise with you. Walking and talking with a friend can be a great way to burn extra calories and reduce your stress level.
  • Create new, more active traditions. Instead of throwing a dessert or cocktail party, try snowshoeing or ice-skating as an alternate holiday event. Play powder puff football or build a snowman.
  • Don't try to lose weight or stick to a restrictive diet this holiday season. If you enjoy your favorite foods in small portions, you'll feel more satisfied. Trying to stay away from certain foods may leave you feeling deprived, which may cause you to eat more than you intended to.
  • Drink plenty of water. Although the cold weather may make you less inclined to grab a glass of water, it is just as important in the winter as it is during the summer. Water helps counter the dehydrating effects of travel or drinking alcoholic beverages, and it may also help satiate your appetite since thirst is often mistaken for hunger.
  • Spread out meals. Don't feel like you have to eat everything at once. Try eating dinner early and then taking a walk before sitting down for dessert.
  • Don't overdo it with alcohol or caffeine. These stimulants will only cause you more grief in the end by adding to your feelings of stress. Try drinking hot herbal tea instead of coffee, and keep the number of alcoholic drinks to a minimum.
  • Don't aim for perfection, and enjoy the imperfections. There is no such thing as the perfect party or the perfect decorations or the perfect way to spend the holidays. Don't set yourself up for disappointment by placing unrealistic demands on yourself.
  • Laugh. Laughing is a great tension reliever. It burns calories, reduces stress and usually means that you're enjoying yourself.

Happy holidays!
